Description

A quick and refreshing salad featuring spinach, strawberries, and a sweet balsamic glaze.


Ingredients

  • 1 cup balsamic vinegar
  • 23 tablespoons maple syrup or date syrup
  • 10 oz fresh baby spinach
  • 3 cups strawberries, cleaned and sliced
  • 1 cup blueberries
  • ⅓ cup crumbled cheese (optional)
  • 1 cup pecans, toasted (some chopped)

Instructions

  1. In a small saucepan, combine balsamic vinegar and maple syrup.
  2. Heat over medium heat, bring to a gentle boil, then reduce to simmer. Stir until the mixture thickens and reduces by about half (10–12 minutes).
  3. Remove from heat and let cool. The glaze will thicken further as it cools.
  4. In a large bowl, combine spinach, strawberries, blueberries, and cheese (if using). Toss gently.
  5. Divide into individual serving bowls.
  6. Top each serving with toasted pecans.
  7. Drizzle balsamic glaze over the top before serving.
