Aromatic Garlic Chilli Noodles with Soy and Vinegar


Ingredients

  • 11 oz (300 g) dried ribbon noodles
  • 1½ tbsp cooking oil (such as grapeseed oil)
  • ½ cup scallions (white part), thinly sliced
  • 1½ tbsp minced garlic (about 4 cloves)
  • ¼ cup low-sodium vegetable broth
  • 2 tbsp light soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp Chinese black vinegar
  • 1 tbsp Korean chili powder or flakes (such as gochugaru)
  • ¼ cup scallions (green part), thinly sliced
  • 1 tbsp toasted sesame seeds
  • Extra chili flakes (optional)

Instructions

  1. Heat a small frying pan over very low heat.
  2. Add the cooking oil, scallions (white part), and minced garlic.
  3. Sauté gently for about 5 minutes, stirring constantly.
  4. Add the vegetable broth, light soy sauce, dark soy sauce, black vinegar, and Korean chili powder or flakes.
  5. Increase the heat to medium-low and let the sauce simmer for 5 minutes, stirring occasionally.
  6. Meanwhile, cook the noodles in a pot of boiling water according to package instructions. Drain thoroughly.
  7. Add the drained noodles to the pan with the sauce and toss well until evenly coated.
  8. Remove from heat and garnish with scallions (green part), toasted sesame seeds, and extra chili flakes if desired.
  9. Serve hot.
