A refreshing and crunchy salad with a flavorful sesame dressing.


Ingredients

  • ½ head green cabbage, finely shredded
  • ½ head purple cabbage, finely shredded
  • 2 cups carrots, matchstick-cut or shredded
  • 1 cup fresh cilantro, chopped
  • ½ cup green onions, sliced
  • 2 cups cooked edamame
  • 12 cups roasted cashews
  • 2 cups crunchy chow mein noodles (optional)
  • Optional protein: grilled chicken, shrimp, tofu, or your choice
  • ¼ cup olive oil (or another neutral oil)
  • 3 tablespoons white vinegar
  • 2 tablespoons sesame oil
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • A few shakes garlic powder
  • Optional: ¼ cup Greek yogurt or mayonnaise (for a creamy version)

Instructions

  1. Add all dressing ingredients to a jar and shake well until smooth and emulsified. Add Greek yogurt or mayo if using and shake again until creamy. Taste and adjust as needed.
  2. In a large bowl, combine green cabbage, purple cabbage, carrots, cilantro, green onions, edamame, cashews, chow mein noodles (if using), and protein of choice (if adding).
  3. Drizzle with dressing and toss until evenly coated. Serve immediately for maximum crunch.

Notes

  • Regular roasted cashews are great, but Thai chili–style cashews add an amazing kick.
  • For a vegan option, skip the Greek yogurt or mayo.
  • For a creamy dairy-free option, try adding white miso instead of yogurt or mayo.
  • For gluten-free, omit the chow mein noodles.
  • Keep salad and dressing separate until serving to maintain crunch.
