Description

Creamy Spinach and Mushroom Gnocchi is a quick, one-pan dish that combines tender gnocchi with a rich, creamy sauce and fresh spinach.


Ingredients

  • 1 tablespoon olive oil
  • 8 oz crimini mushrooms
  • Salt and pepper to taste
  • 16 oz potato gnocchi
  • ½ cup chicken broth
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • ½ teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • 5 oz fresh spinach
  • ¼ teaspoon salt, to taste
  • Coarsely ground black pepper, to taste
  • Red pepper flakes, to taste

Instructions

  1. Heat olive oil in a large skillet. Cook sliced mushrooms seasoned with salt and pepper on high heat for 1-2 minutes until lightly browned. Remove half to a plate.
  2. In the skillet, add uncooked gnocchi, chicken broth, heavy cream, minced garlic, Italian seasoning, smoked paprika, and ¼ teaspoon salt. Bring to a boil on medium heat.
  3. Cover and cook gnocchi for about 5 minutes on medium heat while the sauce boils.
  4. Add fresh spinach and cook, stirring frequently for 5 minutes until wilted. Cook longer for a thicker sauce.
  5. Season with more salt, black pepper, red pepper flakes, and smoked paprika as desired. Top with remaining mushrooms.
