Description
Delicious CRUMBL Snickerdoodle Cupcake Cookies with a creamy frosting.
Ingredients

- 1/2 cup butter, softened
- 1/2 cup granulated sugar
- 2 tbsp brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 1/2 cup all-purpose flour
- 2 tbsp corn starch
- 1/4 tsp cream of tartar
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 3 tbsp granulated sugar (for cinnamon sugar)
- 1/2 tsp cinnamon (for cinnamon sugar)
- 5 oz cream cheese, softened
- 4 tbsp butter, softened (for frosting)
- 1/2 tsp vanilla extract (for frosting)
- 1–1 1/2 cup powdered sugar (for frosting)
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together butter, granulated sugar, and brown sugar until light and creamy. Mix in egg and vanilla until smooth. Fold in flour, corn starch, cream of tartar, baking powder, baking soda, cinnamon, and salt until combined.
- In a small bowl, mix 3 tbsp granulated sugar with 1/2 tsp cinnamon. Roll cookie dough balls in this mixture.
- Scoop cookie dough balls onto the prepared baking sheet and flatten to about 1 inch thickness. Bake for 10 minutes and allow to cool completely.
- Cream together butter, cream cheese, powdered sugar, and vanilla until smooth. Add extra powdered sugar if frosting is too thin.
- Pipe frosting onto each cookie and sprinkle with remaining cinnamon sugar.
Notes
- Doubling or tripling the recipe: 2x flour = 3 cups, 3x flour = 4 ½ cups.
- 2x powdered sugar = 2–3 cups, 3x powdered sugar = 3–4 ½ cups (adjust for frosting thickness).
- For mini cookies, use about 3 tbsp dough and reduce bake time to 7–8 minutes.
