Description

Ingredients

  • 1/2 cup butter, softened
  • 1/4 cup oil
  • 1/2 cup granulated sugar
  • 2 tbsp powdered sugar
  • 1 egg, at room temperature
  • 1/2 tsp vanilla extract
  • 1/4 tsp almond extract
  • 2 1/3 cups all-purpose flour
  • 1/4 tsp cream of tartar (optional)
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 1/2 cup butter, softened (for icing)
  • 2 cups powdered sugar (for icing)
  • 2 tbsp heavy cream, cold (for icing)
  • 1/4 tsp almond extract (for icing)
  • 1 tsp vanilla extract (for icing)
  • Pink gel food coloring

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl or stand mixer, cream together the butter, oil, granulated sugar, and powdered sugar until smooth.
  3. Add the egg, vanilla extract, and almond extract, mixing until fully incorporated.
  4. Mix in the flour, salt, cream of tartar (if using), and baking powder until combined.
  5. Using a large cookie scoop (about 1/4 cup), scoop out 9 cookie balls and place them on the prepared baking sheet. Flatten each ball with your hand to about 1/2 inch thickness.
  6. Bake for 9–10 minutes, then let the cookies cool on the baking sheet for 20 minutes before transferring to a wire rack to cool completely.
  7. In a large bowl or stand mixer with a paddle attachment, cream together the butter, powdered sugar, vanilla extract, and almond extract until smooth.
  8. Add the cold heavy cream and beat on medium speed until light and fluffy.
  9. Add a tiny amount of pink gel food coloring with a toothpick, mixing until you reach your desired shade.
  10. Spread the icing generously on the fully cooled cookies. Serve immediately or chill before serving.

Notes

  • Store frosted cookies in the fridge for up to 7 days.
  • Freeze in an airtight container for up to 2 months; thaw overnight in the fridge before serving.
  • Use room-temperature ingredients for proper cookie texture.
  • Don’t flatten cookies too much—1/3–1/2 inch thick is ideal.
