Farfalle Pasta with Spinach, Mushrooms, and Caramelized Onions Bliss

Description

A delicious dish featuring farfalle pasta with spinach, mushrooms, and caramelized onions.


Ingredients

  • 1 tablespoon olive oil
  • 3 large yellow onions, sliced
  • ¼ teaspoon salt
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon olive oil
  • 10 oz sliced mushrooms
  • 6 oz fresh spinach
  • 1 cup plant-based cream (or dairy half-and-half if preferred)
  • 1 cup shredded hard, plant-based cheese (or Parmesan if dairy is fine)
  • ¼ teaspoon salt
  • 8 oz farfalle pasta

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add sliced onions and cook for about 10 minutes, stirring constantly.
  2. Reduce heat to medium and cook for 10 more minutes, stirring occasionally. Sprinkle with salt.
  3. Continue cooking on medium/low heat for 10 more minutes, stirring occasionally until onions are deep golden brown.
  4. Remove from heat and add balsamic vinegar to deglaze the pan. Stir onions to coat, then transfer to a plate.
  5. In the same skillet, heat 1 tablespoon olive oil over medium heat.
  6. Add sliced mushrooms and a pinch of salt. Cook about 5 minutes until soft.
  7. Add spinach and stir just until wilted.
  8. Add plant-based cream (or half-and-half) to the mushroom and spinach mixture and bring to a quick boil, then reduce to a simmer.
  9. Stir in shredded plant-based cheese (or Parmesan) and salt until cheese melts.
  10. Add caramelized onions back into the sauce.
  11. Cook farfalle pasta according to package instructions. Drain.
  12. Add pasta to the creamy sauce and stir on low heat for a couple of minutes to reheat and coat evenly.
  13. Adjust consistency: add a little more cream if too thick or a bit more shredded cheese if too thin.
  14. Serve warm, with extra shredded cheese on top if desired.
