Description

French-style beef stew with vegetables is a hearty dish featuring tender beef and fresh vegetables simmered in a rich broth.


Ingredients

  • 2 lbs beef chuck, cut into 1.5-inch cubes
  • 1 large yellow onion, chopped
  • 2 carrots, peeled and sliced
  • 4 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 3 tablespoons all-purpose flour
  • 4 cups beef stock
  • 1 bay leaf
  • 3 sprigs fresh thyme
  • 1 lb cremini mushrooms, halved
  • 12 pearl onions, peeled
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Heat olive oil in a large Dutch oven over medium heat.
  3. Season the beef with salt and pepper. Brown the beef in batches until well seared. Remove and set aside.
  4. Add onions, carrots, and garlic to the pot. Sauté until softened.
  5. Stir in tomato paste and flour. Cook for 2 minutes.
  6. Add beef stock, bay leaf, and thyme. Return the beef to the pot.
  7. Stir in mushrooms and pearl onions.
  8. Cover and transfer to the oven. Cook for 2 to 2.5 hours, until beef is tender.
  9. Remove bay leaf and thyme before serving.

Notes

  • Adjust seasoning before serving.
  • Serve with crusty bread or over mashed potatoes.
