Description

Grilled Balsamic Steak Salad with Gorgonzola & Corn is a flavorful dish combining marinated steak, fresh greens, and a zesty dressing.


Ingredients

  • 1 lb flank steak (or ribeye, sirloin)
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 6 cups mixed greens (arugula, spinach, or romaine)
  • 1 ear corn, grilled and cut off the cob
  • 1/2 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1/4 cup walnuts or pecans, toasted
  • 1 avocado, sliced (optional)
  • 2 tbsp olive oil (for dressing)
  • 1 tbsp honey
  • 1 clove garlic, minced
  • 1/4 tsp salt (for dressing)
  • 1/4 tsp black pepper (for dressing)

Instructions

  1. In a small bowl, mix olive oil, salt, black pepper, garlic powder, and smoked paprika.
  2. Rub the mixture onto the steak and let it rest at room temperature for 15–20 minutes.
  3. Heat a grill or skillet over medium-high heat and cook the steak for 4–5 minutes per side (medium-rare to medium).
  4. Let the steak rest for 5 minutes, then slice thinly against the grain.
  5. Lightly brush the corn with olive oil and grill for 8–10 minutes, turning occasionally, until lightly charred.
  6. Let cool, then cut the kernels off the cob.
  7. In a small bowl, whisk together olive oil, honey, garlic, salt, and black pepper until well combined.
  8. In a large bowl, toss the mixed greens, cherry tomatoes, red onion, grilled corn, and walnuts.
  9. Add the sliced steak on top.
  10. Drizzle with the dressing and toss gently.
  11. Garnish with avocado slices if desired.
  12. Serve immediately.

  • This salad can be served warm or cold.
  • Feel free to add other toppings like cheese or additional vegetables.
