  • ½ cup raspberry jam
  • Optional: lemon or orange zest, sanding sugar

Instructions

  1. Prepare baking sheets: Line two 13×9-inch baking sheets with parchment paper.
  2. Mix dry ingredients: In a medium bowl, whisk together flour, cornstarch, and salt. Set aside.
  3. Cream butter and sugars: In a stand mixer, cream the butter and both sugars on medium speed for 2–3 minutes until light and fluffy.
  4. Add wet ingredients: Mix in the egg yolk, vanilla, and almond extract.
  5. Combine with dry ingredients: Gradually add the dry ingredients to the wet mixture until fully combined.
  6. Shape cookies: Form dough balls using a 1-tablespoon cookie scoop and roll them smoothly.
  7. Make indentations: Place dough balls on baking sheets and press a small heart shape into each cookie.
  8. Chill dough: Freeze the cookies for 30 minutes or refrigerate for 1 hour.
  9. Preheat oven: Preheat oven to 375°F (190°C).
  10. Prepare jam: Heat raspberry jam in a microwave-safe bowl until slightly runny and fill each heart indent.
  11. Bake: Bake cookies for 10–12 minutes until edges are golden brown.
  12. Cool: Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
