Description

Homemade Oatmeal Cream Pies are soft oatmeal cookies filled with a sweet cream filling.


Ingredients

  • 1 cup unsalted butter (226 g), softened
  • 1 cup brown sugar (200 g), packed
  • 1/2 cup granulated sugar (100 g)
  • 1 tablespoon molasses (or honey)
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 2 cups all-purpose flour (250 g)
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 cups quick oats
  • 1 1/2 cups unsalted butter (336 g), softened (for filling)
  • 34 cups powdered sugar (330440 g)
  • 1 teaspoon vanilla extract (for filling)
  • 1/4 teaspoon salt (for filling)
  • 1 tablespoon cream (optional, if needed for consistency)

Instructions

  1. Preheat the oven to 350°F (180°C). Line cookie sheets with parchment paper or silicone mats.
  2. In a large bowl, beat together the butter, brown sugar, and granulated sugar until fluffy.
  3. Mix in molasses (or honey), vanilla extract, and eggs until creamy.
  4. Add flour, cinnamon, baking soda, and salt. Mix on low speed until combined.
  5. Stir in the oats.
  6. Form the dough into 1–1.5 tablespoon balls and place 2 inches apart on the cookie sheets.
  7. Bake for 9–11 minutes, or until tops look set. Cool on the cookie sheet for 10 minutes, then transfer to a wire rack.
  8. Beat the butter for the cream filling until fluffy.
  9. Gradually add powdered sugar, vanilla extract, and salt, mixing until smooth.
  10. If needed, add 1 tablespoon cream to reach a spreadable consistency.
  11. Spread 1–1.5 tablespoons of filling on the bottom of one cookie. Sandwich with a second cookie, bottom facing down.

Notes

  • Molasses can be replaced with honey.
  • Quick oats are preferred; rolled oats also work.
  • Cookies can be made ahead and stored at room temperature for up to 3 days or in the fridge for 5 days. Freezing is also possible for up to 2 months.
