Low-Carb Flaky Cream Cheese Danish Delight is a delicious pastry that is keto-friendly and perfect for dessert.


Ingredients

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup powdered erythritol (or preferred keto-friendly sweetener)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese, softened
  • 1/4 cup powdered erythritol
  • 1 teaspoon vanilla extract
  • 1 large egg yolk
  • 2 tablespoons powdered erythritol (for glaze)
  • 12 teaspoons heavy cream (for glaze)
  • 1/4 teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix almond flour, coconut flour, powdered erythritol, baking powder, and salt. Add melted butter, eggs, and vanilla extract. Stir until a dough forms.
  3. Divide the dough into 6–8 equal portions. Roll each into a ball, flatten slightly, and make a thumbprint or spoon indentation in the center.
  4. Beat cream cheese, powdered erythritol, vanilla extract, and egg yolk until smooth.
  5. Spoon the cream cheese mixture into each indentation, spreading slightly to fill the well.
  6. Place on the baking sheet and bake for 18–20 minutes, until edges are golden brown and the filling is set. Cool for 10 minutes on the sheet, then transfer to a wire rack.
  7. For the optional glaze, mix powdered erythritol, heavy cream, and vanilla extract until smooth. Drizzle over cooled danishes before serving.

Notes

  • Adjust sweetness to taste by adding more or less erythritol.
  • Store leftovers in an airtight container in the refrigerator.
