Low-Carb Flaky Cream Cheese Danish Delight is a delicious pastry that is keto-friendly and perfect for dessert.

- 2 cups almond flour
- 1/4 cup coconut flour
- 1/4 cup powdered erythritol (or preferred keto-friendly sweetener)
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 8 ounces cream cheese, softened
- 1/4 cup powdered erythritol
- 1 teaspoon vanilla extract
- 1 large egg yolk
- 2 tablespoons powdered erythritol (for glaze)
- 1–2 teaspoons heavy cream (for glaze)
- 1/4 teaspoon vanilla extract (for glaze)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix almond flour, coconut flour, powdered erythritol, baking powder, and salt. Add melted butter, eggs, and vanilla extract. Stir until a dough forms.
- Divide the dough into 6–8 equal portions. Roll each into a ball, flatten slightly, and make a thumbprint or spoon indentation in the center.
- Beat cream cheese, powdered erythritol, vanilla extract, and egg yolk until smooth.
- Spoon the cream cheese mixture into each indentation, spreading slightly to fill the well.
- Place on the baking sheet and bake for 18–20 minutes, until edges are golden brown and the filling is set. Cool for 10 minutes on the sheet, then transfer to a wire rack.
- For the optional glaze, mix powdered erythritol, heavy cream, and vanilla extract until smooth. Drizzle over cooled danishes before serving.
Notes
- Adjust sweetness to taste by adding more or less erythritol.
- Store leftovers in an airtight container in the refrigerator.
