Description

The Best Detox Crockpot Lentil Soup is a hearty and nutritious dish packed with vegetables and lentils. Perfect for a healthy meal.


Ingredients

Scale
  • 2 cups butternut squash, peeled and cubed
  • 2 cups carrots, peeled and sliced
  • 2 cups potatoes, chopped
  • 2 cups celery, chopped
  • 1 cup green lentils
  • ¾ cup yellow split peas
  • 1 onion, chopped
  • 5 cloves garlic, minced
  • 810 cups vegetable broth or chicken broth
  • 2 teaspoons Herbs de Provence
  • 1 teaspoon salt (plus more to taste)
  • 23 cups kale, stems removed and chopped
  • 1 cup parsley, chopped
  • ½ cup olive oil
  • A splash of sherry, red wine vinegar, or lemon juice

Instructions

  1. Add all crockpot ingredients to the slow cooker.
  2. Cover and cook on High for 5–6 hours or Low for 7–8 hours.
  3. Scoop out about 4 cups of soup into a blender. Add the olive oil and pulse gently until semi-smooth and creamy.
  4. Pour blended soup back into the crockpot and stir to combine.
  5. Stir in the kale and parsley. Turn off the heat, cover, and let it sit for a few minutes.
  6. Taste and adjust salt. Add a splash of sherry, vinegar, or lemon juice to brighten the flavor.

Notes

  • For stovetop, simmer the first group of ingredients for about 1 hour.
  • For Instant Pot, use 6–7 cups broth and cook on Soup for 30 minutes.
