Ingredients

- 2 cups butternut squash, peeled and cubed
- 2 cups carrots, peeled and sliced
- 2 cups potatoes, chopped
- 2 cups celery, chopped
- 1 cup green lentils
- ¾ cup yellow split peas
- 1 onion, chopped
- 5 cloves garlic, minced
- 8–10 cups vegetable broth or chicken broth
- 2 teaspoons Herbs de Provence
- 1 teaspoon salt (plus more to taste)
- 2–3 cups kale, stems removed and chopped
- 1 cup parsley, chopped
- ½ cup olive oil
- A splash of sherry, red wine vinegar, or lemon juice
Instructions
- Add all crockpot ingredients to the slow cooker.
- Cover and cook on High for 5–6 hours or Low for 7–8 hours.
- Scoop out about 4 cups of soup into a blender. Add the olive oil and pulse gently until semi-smooth and creamy.
- Pour blended soup back into the crockpot and stir to combine.
- Stir in the kale and parsley. Turn off the heat, cover, and let it sit for a few minutes.
- Taste and adjust salt. Add a splash of sherry, vinegar, or lemon juice to brighten the flavor.
Notes
- For stovetop, simmer the first group of ingredients for about 1 hour.
- For Instant Pot, use 6–7 cups broth and cook on Soup for 30 minutes.
